How big can a file be?

Large enough for a menu or a spec sheet comfortably. A file big enough to be a problem is usually a file that should have been a page.

Can I link straight to a PDF from a poster?

You can, and a page is usually kinder — a PDF on a phone means pinching and scrolling sideways.

Is the old version still reachable?

No. Replacing a file replaces what the address serves, and the previous one is not left at a guessable URL.
